Usually we push the project to link to usage cases from their homepages.
This is the natural place someone would search for them, I'd say.
As for MapServer and MapIt I know that they have such sections.

On the more general subject:
Maintaining the FreeGIS information on a high level is quite some work.
Not many people value this expert information system in money so far.

We are quite happy that FreeGIS is very successfully 
providing a more or less comprehensive about what is out there.
More information would be great, but will be an effort to maintain.
